Vegan Banana Loaf
This loaf I devoured. It wasn't pretty, but it was not in my control; I HAD to - deliciousness took on a whole new meaning, and I ate it. I did manage to leave roughly 1/4, VEGAN BANANA LOAF🍌 ... I would. And I did 😬. Actually didn’t realise it was possible to eat an entire one alone (well I left 1/4 ish). I felt no shame, but I did feel I didn’t probably need to eat again for several days...

4 very ripe bananas 🍌, mashed 1/4 cup dark brown sugar 1/2 cup melted coconut oil 1 cup plant milk 1 flaxseed egg (1 tbsp flaxseed + 3 tbsp water - leave to sit for 5 minutes) 2 tbsp cinnamon 1/2 tsp salt 1 tsp almond extract 1 tsp vanilla essence 2 cups self-raising flour.
Mix all ingredients (apart from flour) together, whisk well. Then stir in your flour. Preheat oven to 160 degrees Celsius. Cook for roughly 40 minutes till golden colour. *Add chocolate chips if you wish for extra yum.
There we have it - eat warm with maple syrup drizzled, or cold with extra banana and cinnamon, or peanut butter.
