Simple dinky black bean & sun dried tomato hummus

Here's a game changer for you all, black bean and sundried tomato hummus.
As a gym-goer, I am always keen to find quick, simple ways of feeding myself healthy, vegan snacks. The beauty of this hummus (asides the fact it is soooo easy to make and super-quick) is the fact that it is so versatile. Have it in a jacket potato (great post-workout meal), spread on toast, or slap it all over some salad.
Black bean health benefits
These dinky black beans are a high-protein, SUPER healthy & versatile food. Great for slow-release energy, black beans are a reliable source of fibre and folate â essential for good heart and brain function. This recipe is another of my simple, on-the-run & zero-time-to-spare recipes.
As I have snuck in here some miso paste - this is a fermented food which is gut healing too. I think of everything ;)
Here is the recipe for this energy-charged bowl of beans goodness...
I've added in my favourite smoked seaweed oil to give it a depth of flavour and subtle smokiness, it's optional but it won't taste quite the same without it!

INGREDIENTS
1 tin black beans
6-8 sundried tomatoes
1 clove garlic
2 droppers full Doctor Seaweed's smoked sea weed oil (optional, but highly recommended - buy it here)
1/4 tsp salt
1 tbsp miso paste
1 small-medium avocado (flesh of)
METHOD
- In a food processor, combine all the ingredients, blitz until you can bear the - blitzing noise no more,
- scoop out into pretty dish
VOILA!

Serve however you like - with potato wedges, salad, as a dip with toasted sourdough... mmmmmmmmmmm
